Of the fifteen step process, the first step is trawling for fish in the water bodies. The fishes which are caught are immediately frozen to a temperature of -18 c. As the fishing vessel reaches the harbor, fishes are unloaded and weighed. For the processes of caudal fins detachment, descaling and degutting, these fishes are thawed. The prepared fishes are cooked in steam and allowed to cool for the purpose of filleting. After being cut into smaller pieces, it is filled in a can in which brine, water or oil is added. Then after the can is sealed airtight and sterilized. The post-sterilized cans are labelled according to the type of fish which is canned. It is moved to the storage section and despatched as per the demand.
