Overall, the process of fish canning has several stages from fishing to despatching for sales.
The first step is trawling for fish in the water bodies. The fishes which are caught are frozen to a temperature of -18 degree celcius. As the fishing vessel reaches the harbor, fishes are unloaded.
After weighing and thawing, these fishes’ fins are detached, descaled and degutted. The prepared fishes are cooked in steam and allowed to cool before filleting. After filleting, they are filled in cans of brine, water or oil. The cans are then sealed airtight and sterilized. Once this happens, the cams are allowed to cool.
The cooled, sterilized cans are labelled according to the type of fish which each can contains. These are then moved to the storage section and despatched to the supermarkets as per the demand.
