The given diagram is a stage-wise illustration of red wine making process on a commercial basis.
In the first stage, stalks of ripened red grapes are destemmed and preserved for about two to three weeks in an anaerobic condition.This is then sent for crushing without unskinning .The crushed mixture is then subjected to primary fermentation and then drained after pressing it. The pot ale is separated here and the free run juice, without stem and seeds are fermented again. Pot ale is separated again by the process of clarification with the help of a filter. The fine solution which is filtered out is stored in individual oaken casks for maturation for about six months to two years.Edible acids and sugars are added to the matured red wine, before bottling in order to adjust the taste.
